My Super Veggie Soup

Hey guys,

So I just wanted to share with you a soup recipe that has been helping me stay adequately fuelled while helping me to lose weight for my upcoming fight. This energy dense veggie soup is what I have everyday for lunch, and the recipe below will give you enough soup for two people for an entire week, so feel free to test it out for yourself, and have fun adding your own personal touches to this awesome addition to a healthy diet.

Shopping List: ( $40 )

So this is based on prices for Aldi and IGA Supermarkets, so prices may vary depending on where you shop. I get all ingredients I can from Aldi, and the rest from IGA so here goes. The Total cost represents if you had to buy all ingredients, not the cost of the actual meal itself, meaning you will have left over Ingredients.

ALDI: ( $27 )

Potatoes x 4

Butternut Pumpkin x 1/2

Carrots x 2

Cauliflower x 1

Onions x 2

Garlic x 1 Bulb

Mushrooms x 200 g

Baby Spinach x 120 g

Can Italian Tomatoes x 400 g x 2

Can Corn x 400 g

Veggie Stock x 2 TbSp

Salt

Pepper

IGA: ( $13 )

Macaroni x 250 g

Can Coconut Milk x 400 mL x 2

Smokey Paprika x 1 TbSp

Cumin x 1 TbSp

Cayenne Pepper x 1 TbSp

(Less if you're a bit soft) ​

Method:

1. Peel and cut up Potatoes, Pumpkin,

Carrots, and Cauliflower.

Load into a Large Pot and fill until

most ingredients are immersed.

Add Veggie Stock, Paprika, Cumin and

Cayenne Pepper, mix and cover.

2. Chop Onion and Mushroom into small

chunks, and crush Garlic.

3. Heat a TbSp of Extra Virgin Olive Oil

and Saute Onions until golden brown.

4. Add Mushrooms Garlic, Can of

Corn and both Cans of Tomatoes.

5. Take 1.5 L of Soup Broth from the Veggies, pour into another pot and boil Macaroni

until mostly cooked.

6. Add Baby Spinach to Potatoes,

Pumpkin, etc and Whiz up with a

handheld blender or food processor.

Leave slightly chunky.

7. Add Tomato and Onion mix and

cooked Macaroni to the blended

Veggies.

8. Add both Cans of Coconut Milk to the

mix and Stir.

9. Give 5 min to cool down and tuck in...

One serving for me is 2.5 full Ladles

and 1 slice of Toasted Mixed Grain
